Finca El Jutal is located in Belen Gualcho, Ocotepeque, Honduras and run by farmer Salvador Santos Martinez. Salvador's farm sits at an elevation of approximately 1,600 meters above sea level and consists of a total of 2.8 hectares of land. This honey lot is made up of the IHCAFE 90 variety, which is a hybrid varietal created to help prevent disease and low yields in lower altitude. 

Salvador has been producing for 21 years. While previously Salvador only produced what would be considered commercial grade coffee, he planted the most recent varieties (including IHCAFE 90) in 2008, and has found success over the past few years. His neighbors took note of how his varieties were producing at that elevation and they also decided to start growing them.

Honey processing requires the farmer to maintain a certain level of the sugary mucilage on the coffee beans during fermentation, creating unique oxidization, and developing fruit forward, unique sweetness in the cup. Depending on how much mucilage is left on, as well as how the fermentation goes, honey process coffees can range in profile from being super clean and sweet, almost like a washed coffee, to super funky and fruity, like a natural. 

This lot is more of the latter, with vibrant notes of cherry cola, blackberry, and honey pastry. It's a really nice surprise, and one we're really excited to be roasting.

When Will My Order Ship?

We roast Monday through Friday, and most orders ship the next roast day from when they are placed.

The only exception is any pre-order item, which will ship on the date stated on that item's pre-order page.

Do You Have Recommendations For Brewing?


First, we recommend a brewing ratio of about 1:17. So whatever your dose of coffee is for a brew (we recommend weighing your coffee in grams), multiply that number by 17, and use that weight of water to brew.

Second, always try to grind your coffee fresh, directly before you brew. This will significantly impact the flavor.

Lastly, and maybe most important, always use the highest quality water you can. Filtered is always best. Coffee is 98.5% water, so the water you use makes a huge difference.

Is ReAnimator Coffee Organic/Fair Trade?

While some of our coffees may happen to be certified organic or fair trade, we do not specifically look for either of these certifications when sourcing coffees, and do not market them as such.

All of our coffees are bought at fixed prices above the c-market, and 99% of the time we are paying higher prices than the Fair Trade Certified price.

Our sourcing goals are always quality and flavor focused, and we buy from producers and importers we trust to provide us with coffee that fits into our ideology.
