Tasting Notes: Candied Sugar, Vanilla, Red Grape

Last year during our annual visit to Costa Rica, we established a new relationship with the Granitos de Altura del Ortiz Micromill, in the Dota Valley of Tarrazu. While we meet plenty of amazing families growing coffee, the setup at Granitos was special, as father Omar handled the farming, and the entire milling operation was run by his 5 daughters (this dynamic has since changed slightly... and you'll see more on that in an upcoming offering).

Ortiz 1900 gets its name from the altitude at which Omar is growing the coffee: 1900 meters above sea level. At these heights, along with the climate in the Dota Valley, coffees take on incredibly sweet character, and build really nuanced, delicate acidity. 

The white honey process is extremely common in Costa Rica, and consists of leaving just a bit of mucilage on the coffee before fermentation. This results in some unique compounded sugars, which have to be tasted to be fully understood.

When will my package ship?

Do you offer free shipping?

All orders over $35 get free shipping!

How do you ship?

At checkout, you will be able to select a shipping option that works best for you, with rates calculated dynamically based on your proximity to our roastery.

Do you ship internationally?

We do offer international shipping -- at checkout, rates will be dynamically calculated based on the country you are ordering to. If you don't see your country represented, reach out via our contact form.

Is your coffee organic and/or fair trade?

While some of our coffees may be certified organic or fair trade, we do not specifically look for either of these certifications when buying, and do not market them as such. All of our coffees are bought at fixed prices above the market, and 99% of the time we are paying higher prices than the Fair Trade Certified price. Our sourcing goals are always quality and flavor focused, and we buy from producers and importers we trust to provide us with coffee that fits into our ideology. 

How fresh is my coffee when I receive it?

We roast Monday through Friday each week, so generally, we try and ship coffee within 24 hours from roast whenever possible. With our shipping times, that means you should always receive your coffee within 2-5 days from roast, depending on your location and proximity to Philadelphia, and the shipping option you choose.

Do you have recommendations for brewing?

Yes! First and foremost, whenever possible, grind directly before brewing. This will help maintain freshness, and help you get the most from your coffee. Additionally, we recommend a ratio of about 1:16.8, (so about 22g of coffee for a 12oz cup). If your brew is tasting too weak, try using a finer grind size; and if it’s a slower, heavier brew, try to make the grind more coarse.
