Honduras Isaias Fernandez Anaerobic Process

Growing more and more popular, anaerobic fermentation is very similar to natural processed coffees, in that the cherries are left intact during fermentation. However, a big difference is that in anaerobic fermentation, the cherries ferment in an oxygen free environment (usually a barrel or some kind of tank.) This additional variable changes the nature of the fermentation, and gives the coffee unique—and often, wild—character.
This lot comes from third generation coffee farmer Isaias Fernandez, who's farm La Fincona, is situated in the mountains of the same Santa Barbara region where we purchase our other Honduras lots from.
Due in no small part to the anaerobic fermentation, Isaias' coffee is incredibly complex and fruit forward. There is tropical fruit galore, as well as notes of ripe blueberry. It's balanced by a cocoa sweetness, and some tang reminiscent of fresh cream. It's a dynamic experience that any adventurous coffee drinker should try.

Do you ship internationally?
We do offer international shipping -- at checkout, rates will be dynamically calculated based on the country you are ordering to. If you don't see your country represented, reach out via our contact form.
Is your coffee organic and/or fair trade?
While some of our coffees may be certified organic or fair trade, we do not specifically look for either of these certifications when buying, and do not market them as such. All of our coffees are bought at fixed prices above the market, and 99% of the time we are paying higher prices than the Fair Trade Certified price. Our sourcing goals are always quality and flavor focused, and we buy from producers and importers we trust to provide us with coffee that fits into our ideology.
How fresh is my coffee when I receive it?
We roast Monday through Friday each week, so generally, we try and ship coffee within 24 hours from roast whenever possible. With our shipping times, that means you should always receive your coffee within 2-5 days from roast, depending on your location and proximity to Philadelphia, and the shipping option you choose.
Do you have recommendations for brewing?
Yes! First and foremost, whenever possible, grind directly before brewing. This will help maintain freshness, and help you get the most from your coffee. Additionally, we recommend a ratio of about 1:16.8, (so about 22g of coffee for a 12oz cup). If your brew is tasting too weak, try using a finer grind size; and if it’s a slower, heavier brew, try to make the grind more coarse.
